This is definitely not true generally! I value my time high as well and I have been using Linux for many years. System updates are no worse than any other system, I would even say easier as I don't need to reboot every time. I have been using VSCode, Libreoffice, GIMP, VLC, Firefox, KiCAD, MPV, VLC and many other apps (mostly CLI) - mostly backend development, docker, databases, webapps - and I had wonderful experience doing so. I can imagine it may be more difficult for graphic designers and a like but I can imagine that even in that category some people are using only basic features doable in SW like GIMP and yet are still paying a lot for subscription-based proprietary software unnecessarily.
